Shiitake Mushroom: Benefits, Vitamin B12, Vitamin D and How to Take It
Quick answer: Shiitake (Lentinula edodes) is an edible mushroom used in East Asian cooking and traditional wellness for centuries. It provides beta-glucans that support the immune system, small amounts of vitamin B12, vitamin D when exposed to sunlight or UV, and antioxidants such as ergothioneine. Food shiitake is not a reliable source of B12 on its own, so people with low B12 usually need a supplement.

What is shiitake mushroom?
Shiitake grows naturally on hardwood logs and is now one of the most widely cultivated mushrooms in the world. It is valued both as food and as a "functional mushroom": a mushroom eaten for more than its taste. In India it is mostly sold dried or as an extract in supplements.

Shiitake mushroom benefits
1. Supports the immune system
Shiitake is rich in beta-glucans, fibres that interact with immune cells in the gut. In a 4-week study, healthy adults who ate 5–10 g of dried shiitake a day showed better immune-cell activity and higher levels of secretory IgA, an antibody that protects the gut lining, than at the start (Dai et al., 2015).
2. Gives a natural boost of vitamin B12
Very few non-animal foods contain active vitamin B12. Dried shiitake is one of them: one review found an average of about 5.6 µg of B12 per 100 g of dried shiitake, but with large differences between samples (Watanabe et al., 2014). That makes shiitake a helpful extra, not a complete B12 solution for vegetarians.
3. Can provide vitamin D
Like our skin, mushrooms make vitamin D (D2) when exposed to sunlight or UV light. Sun-dried or UV-treated shiitake contains more than mushrooms grown in the dark. Vitamin D3, the form your body makes in sunlight, is usually used in supplements because it raises blood levels more effectively than D2. Read more in Mushroom vitamin D: D2 vs D3.
4. Antioxidant support
Shiitake contains ergothioneine, an antioxidant the body cannot make itself, which helps protect cells from everyday oxidative stress.
5. Heart-friendly nutrition
Shiitake is low in calories and fat and contains eritadenine and beta-glucans, which have been studied for their role in healthy cholesterol levels. Most of this research is in animals, so treat it as a bonus, not a reason to replace medical advice.
Shiitake and vitamin B12: what vegetarians should know
India has a high rate of low B12, mostly because B12 comes from animal foods and many people eat a vegetarian diet. Common signs include tiredness, tingling in the hands and feet, and poor concentration (see our guide Vitamin B12 deficiency: signs, causes and how to fix it). | Source | B12 reliability | Notes |
|---|---|---|
| Dried shiitake | Low to moderate | Varies widely between batches; also depends on how much you eat |
| Milk, curd, paneer | Moderate | Good daily source for lacto-vegetarians |
| Eggs, fish, meat | High | Not suitable for vegetarians |
| Active B12 supplement (methylcobalamin) | High and consistent | A fixed dose every day; the form used in Level Up B12 + D3 |
The Indian recommended daily allowance (ICMR-NIN 2020) for adults is 2.5 µg of B12. A capsule with a fixed dose of active B12 makes it easy to reach that every day, while shiitake adds beta-glucans and natural nutrients alongside it.
How to take shiitake

- As food: soak dried shiitake in warm water for 20 minutes and cook it well in soups, stir-fries or dal. Always cook it; don't eat it raw.
- As a supplement: take an extract with a meal, at the dose on the label. Extracts concentrate the beta-glucans, so a capsule replaces a large amount of fresh mushroom.
- Timing: with breakfast suits most people, especially in a formula that also has vitamin D, which is absorbed better with food.
- How long: nutrient levels build up gradually; give any routine 4–8 weeks of daily use.
Side effects and who should be careful
- Shiitake dermatitis: an itchy, streaky rash that some people get from raw or undercooked shiitake. Cooking it thoroughly prevents this.
- Mushroom allergy: avoid shiitake if you're allergic to mushrooms.
- Medicines and conditions: if you're pregnant, nursing, on medication (especially immune-suppressing drugs) or managing an autoimmune condition, check with your doctor first.
Shiitake in Level Up B12 + D3
Level Up B12 + D3 pairs shiitake mushroom extract with active vitamin B12 (2.5 µg, 100% of the daily allowance), vitamin D3 (2000 IU), and Ayurvedic turmeric, boswellia and ashwagandha, in 1 capsule a day. Every ingredient and its dose is listed on the product page.
Frequently asked questions
Do mushrooms have vitamin B12?
A few do. Dried shiitake contains small and variable amounts of active B12, but not enough to rely on alone. Vegetarians with low B12 usually need a supplement or fortified foods.
Is shiitake good for immunity?
Shiitake contains beta-glucans that support immune function, and a human study found better immune-cell activity after 4 weeks of eating shiitake daily. It supports the immune system; it doesn't prevent or treat illness.
Can I take shiitake every day?
Yes. Cooked shiitake and shiitake extracts are generally safe to have daily at normal food or label doses. Don't eat it raw.
Is shiitake the same as the mushrooms sold in Indian markets?
No. Most fresh mushrooms in Indian markets are button or oyster mushrooms. Shiitake is a different species, usually sold dried or as an extract.
What is the best time to take a shiitake supplement?
With a meal, usually breakfast. If the formula also contains vitamin D, taking it with food helps absorption.
